Shortcake is typically made with flour, sugar, baking powder or soda, salt, butter, milk or cream, and sometimes eggs. The most famous dessert made with shortcake is strawberry shortcake. With all that sugar and carbohydrates it is a nightmare for diabetics.
Make it diabetic friendly with the simple and healthy alternatives to the sugary high carb traditional strawberry shortcake.
- Instead of shortcake use Angel food cake. Angel food cake has fewer calories, sugars and “fast” carbohydrates. Which means that for diabetics angel food cake when consumed in low to moderate amounts on an occasional basis will not upset their blood sugar levels, at least not to any great degree.
- Use a fat-free cream, plain greek yogurt or a zero carbs/sugar yogurt.
- Top with sliced fresh strawberries.
