Carrot Salad Recipe
(Serves 2)
Ingredients
1 cup shredded carrots
1/4 cup low fat mayonnaise
1 tbsp grated ginger
1 tbsp tahini, curry powder or mustard of choice
Salt / Pepper to taste
Directions
Combine all ingredients.
Cover and let the carrot mixture sit in the fridge for one hour.
Serve with tuna for a great lunch.
